Green Chili Chicken Enchiladas

If you enjoy Twisters green chili chicken enchiladas then I'm pretty sure you will enjoy this chicken enchilada recipe.  These chicken enchiladas have always been one of my family's favorite meals. After years of non-stop compliments on them, I decided to share this chicken enchilada recipe with you.

This recipe for green chili chicken enchiladas is so delicious and tastes so authentic you would never know that I didn't come from that culture except for the fact of me telling you. Of course it does help living most of my life in the official Hatch green chili state. The use of fresh homemade chili powder not only gives these enchiladas their authentic great taste, but allows you to adjust the heat of your enchiladas for those who really like it hot.

Now for the best enchiladas or any meal for that matter, it is best to use the freshest ingredients as possible. I like to buy dried chili pods of Anaheim, Habanero, and other kinds of peppers so that I can insure they have been washed, as well as either bring them back to life to turn into a sauce  or grind them into powder for seasoning my meat for tacos, enchiladas, tamales, fajitas and more.

For this particular chicken enchilada recipe I use the chilies ground to a powder to season the chicken breasts while they are boiling in a cup of water along with a pinch of salt, some garlic and paprika powder. Once the chicken is thoroughly cooked, I shred the chicken so that every bit of chicken becomes seasoned with the chili and garlic infused water. Adding some diced hatch green chili to the mix to make it an authentic green chili chicken enchalada with intense flavour.

  • pyrex 9x13 baking pan
  • Pastry brush

  • Tupperware containers for each garnishment

Green Chili Chicken Enchiladas

Cook Time: 2 hours
Green chili chicken enchiladas
Prep Time: 35-45 minutes
Makes 24 enchiladas


3 Chicken breast halves
24 Corn tortillas
1 cup roasted and chopped hatch green chili
1 cup water
1 tsp salt
1 tbsp + 1 tsp chili powder (ground chili peppers)
1 tbsp + 1 tsp paprika
1 tbsp + 1 tsp garlic powder
2 tsp ground black pepper
1 tsp lime salt or 1/2 tsp lime juice
1 tsp ground habanero peppers
1 cup milk
1/3 cup wheat flour
Vegetable oil (or frying oil of your choice)
1 lbs Monterey Jack shredded cheese


1 lbs Monterey Jack shredded cheese
2 Tomatoes diced
Fresh Baby spinache
Sour cream
Chopped Black olives
Chopped onions
Green chili sauce


First prepare your cheese and garnishings that need to be chopped, diced, or shredded and place them in containers in your fridge so they are ready to use.

In a medium pot add the chicken breasts, ground chili powders, green chili, paprika, garlic, salt, pepper, water and lime and heat over medium high heat until chicken is thoroughly cooked. (For less spice heat you can use mild peppers and omit some of the lime.) Once the chicken is cooked reduce the heat to low and shred the chicken with either sredding claws or 2 forks. When all the chicken is shredded stir it around to make sure it all gets seasonedeep then cover with a lid.

In a large measuring cup add 1/3 cup wheat flour to 1 cup of milk. Whisk the ingredients together until there are no lumps. Add the milk and flour mixture to the chicken and cook on medium. Stirring somewhat frequently until it starts to thicken, then reduce heat to low and cover.

Brush the corn tortillas with vegetable oil on both sides. In a small frying pan on medium high heat, cook the tortilla just enough for a little bubble or two to start forming in the tortilla and then flip the tortilla with your tongs. Remove the corn tortilla from heat when a little bubble starts forming again. This will make the corn tortilla flexible enough to form the enchilada.

Preheat your oven to 375°. Take the cooked corn tortilla and place it in the pyrex baking dish. Place a pinch of shredded monterey jack cheese down the center of the tortilla. Then spoon a serving sized spoonful of the chicken and green chili sauce on top the cheese. Fold one side of the corn tortilla on top the chicken then fold the other side on top of the first. Line each enchilada up next to each other until the pan is full. I usually can only fit 12 enchiladas in the 9x13 pyrex baking pan, having to cut one in half putting the two halves side by side to fill the pan completely. Top the enchiladas with shredded monterey jack cheese and cover with aluminium foil to keep the cheese from browning too much. Bake in the oven at 375° for 30 to 45 minutes. Cheese will be melted and the enchiladas will be golden.

When serving, garnish the top of these chicken enchiladas with your choice of diced tomatoes, chopped black olives, fresh baby spinach or lettuce, green chili sauce, and sour cream. Oh, one more thing, is that having high expectations for your first purchase could keep you from catching a deal of a lifetime. If you are willing to put some time into learning how to renovate, upgrade, so you can do it yourself, or hire professionals, you can always bring that deal to meet a higher standard, maybe even your expectations.

Where to Purchase a House with a Low Income and Not Get Scammed

So let me tell you where you need to look when you don't have a lot of money but you want to purchase a home and property. Moreover, I will tell you how you can make sure you do not get scammed when you try to purchase a home. There are a couple ways you can go about finding a house you can purchase with a low income, so let's get started discussing them.

Stop Worrying that you don't Qualify to Rent to Own 

I'm sure you have heard of the rent to own process. Before you comment about not being able to qualify to rent to own, let me just say that you don't have to worry about qualifying for much when you search to buy a home from an owner who is willing to finance. If you make sure to look for a house that is in the price range of what you are paying in rent already, as well as be an honest person when meeting with an owner who is willing to do a rent to own contract helps finalize a deal. That means explaining any blimishes on your rental and or credit history, and demonstrating how you are changing those blemishes. You can do a search through online classified ad websites and apps like your local Craigslist, or you can even search Google with the term owner financed properties for rent to own or for sale in the area you would like to live. That's how I purchased my first home. You may be surprised at the deals you can find that will make it affordable for you to own your own house even on a tight budget.

How to not get Scammed when Buying a House

To insure you are not being scammed you will want to make sure the seller is open to signing a rent to own contract, and provide you with information such as their full name, the property deed, the property tax ID, and the county of the state the property resides. Then you can contact the clerk at the county assessors' office of the county the property resides to verify that the property up for sale is owned by the seller in question. Furthermore, a legal property deed will be a document that is legally stamped and notarized by a clerk at that county assessor office. When you meet the home seller, if they don't have all these ducks in a row then you need to look at a different nest.

The other way to buy a house on a tight budget is to go straight to a main source of properties and houses available in the county and state you would like to live. That source would be the county assessors' office. There you can contact the clerk and inquire about homes and properties that have been repossessed due to taxes owed. You will want to ask if they can tell you how to go about purchasing a reposessed property for the amount of the taxes owed and the fees associated with transferring deed ownership. Sometimes the county assessors will hold auctions for properties repossessed due to tax evasion. Of course the first method of trying to purchase a house with a low income from the county assessors could save you more money and is how my neighbor bought extra property to add on to his land. However, the county assessor auctions can be just as affordable for you to purchase a home, if you're looking in a lightly populated area.

Now that you know where to look to purchase a home on a tight budget, you better start to research so you will have an idea of how much money it will cost to purchase a house through the methods above. How to Bake Without an Oven

Oven Not Working, No Oven, Oh No!

Have you ever wondered "How can I bake without an oven?" Maybe your oven broke, you were experiencing an electrical outage, or you were out of propane, but you had a dire need to bake.  When I started living off grid a few years back, I knew my family and I would start to get bored of the same old stove top cooked meals. I had to ask myself that very question.  Needless to say, if you haven't had to ask yourself "How can I bake with no oven?", Murphy's law will most likely force you to ask yourself on a night you have your meal ready for the baking and everyone's hungrily waiting.  With that said I would like to explore with you the options I have found available on the market as well as DIY ideas you can use to bake without a conventional oven.

12 Ways to Bake Without an Oven

 If you have a dutch oven and your meal fits inside it you can go about baking without an oven pretty easily as was done back in the Pioneer age, or on top of the stove if your stove top is usable. If you have electricity available you can use a slow cooker, otherwise a pressure cooker, or your stove top could also do the job of baking without an oven. However not everyone has all the cooking and baking tools available, I being one to own neither a pressure cooker or Dutch oven. I know, and I call myself a homesteader / off gridder. However, a good Homesteader learns how to make do with what is available right?

Portable Ovens Available on the Market

 Now of course if you don't have electricity or gas for your stove top the options above are just about useless, minus the Dutch oven, so it's good to know there are other options to bake without an oven. Some of the options such as a Global Sun Oven will require some investment and of course certain fuels to be readily available. There is also the Herc Tea Light oven and with the XXL version you can bake up to three loaves of bread using tea light candles. On eBay if you go looking for you can find an oven that utilizes a propane camping stove to bake goods in the oven below. However an even more budget-friendly option is the Coleman camping oven. The only main issue I as an indulger of baked goods and baking sees is the size. That's why you're still reading isn't it? You're not happy with the size either. I know I just gave all you guys out there the right to say "I knew it, size does matter." When it comes to baking, it does.

Make Your Own Oven!

 I have found that two roasting pans or steam table pans that are at least 4 inches deep can make a great oven that you can place on a camping stove, stove top, wood burning stove, or brick stove. Thus when you have no sun, electricity, or gas, you can bake with no oven, as long as you have a way to make a fire underneath the pans. What I did was place one pan right side up, placed a metal rack inside, then placed the other pan upside down on top of the first pan. Next you just heat up the pans and you can bake to your hearts desire. Of course certain baked goods require the typical baking hacks you would use in a conventional oven to achieve desired results as well as getting to know how the oven bakes with different types and levels of heat sources underneath will be a key to getting your desired results. This took me a bit of trial and err.

Getting the Supplies for the Pan Oven

 If you don't have 2 deep roast pans or steam table pans, stores such as the Dollar General or Family Dollar carry roast pans for pretty cheap. You can also check your local thrift stores, schools, and restaurants as they may discard steam table pans just because they've been deemed to old to use. Don't forget to pick up a couple of metal racks with different heights to fit inside your oven to provide you with different shelf heights.

DIY Cardboard Box Oven

 Another DIY idea to bake without an oven you can try is the cardboard box oven idea. You cover a box with aluminium foil, with a flat heat resistant surface large enough for the box to sit on, place 4 cans of the same size, a metal rack to rest on the cans, and hot coals underneath the rack enclosed by the box. DIY Greenhouse Panel Sun Oven

Building your own sun oven is also another do it yourself solution allowing you to bake with no conventional oven. I have 2 DIY sun oven ideas that are pretty easy to do, however one will cost more to make, how much more will depend on whether you can acquire the needed materials for cheap. This DIY sun oven idea utilizes a south facing window and greenhouse panels hot glued together to form a box on the outside of the window supported with a wooden support base. Allowing you access to the sun oven through the window, you can now be inside baking in a sun oven.

DIY Cardboard Box Sun Oven

 The other do it yourself sun oven idea utilizes a cardboard box with the inside (flaps to open end of box included) covered in aluminum foil making sure flaps can be adjusted to direct sunlight, and the outside painted / covered with black construction paper. Make a door to allow and trap sunlight in using plastic wrap and scraps of cardboard as the frame for the door and there you have made a sun oven with items you can find around your house or for really cheap.

Yields: 8 quarter pound juicy hamburgers
  • 2 lbs 90% lean / 10% fat Beef or Sirloin, freshly ground and pink slime free
  • 2 Eggs
  • 2 tbsp Worcestershire Sauce
  • 3 tsp Johnny's Seasoning Salt
  • 1 tsp Onion Powder or 1/2 c freshly chopped onion
  • 1 tsp Garlic Powder or 2 cloves of fresh minced garlic or sliced thin
  • 1 tsp Black Pepper
    No need for bread crumbs or flour in this juicy hamburger recipe, all they do is dry the hamburger out, and you get enough dry burgers at Burger King, Sonic, and McDonald's.

How to Make the Best Burgers Instructions

  • If you are grilling with a gas or electric grill, heat your grill to medium high heat of about 350ºF so that when you place your hamburger patty on the grill, it will sear the meat quickly and be less likely to stick to the grill. If you are using a frying pan to help prevent sticking put a little extra virgin olive oil (EVOO) to thinly coat the bottom of the frying pan and then heat up the pan to a medium high heat of about 350ºF.  When you are grilling these juicy hamburgers with charcoal set your coals up so you have a medium high heat area on the grill (where you can hover your hand a couple inches above the grill and within a few seconds it should be too hot to handle) and a medium heat area (where you can hover your hand a couple inches above the grill for at least a minute without it being too hot to handle).
  • In a large bowl mix Worcestershire sauce, Johnny's Seasoning Salt, onion powder, garlic powder, and black pepper together thoroughly.
    Add the 2 lbs 90% lean / 10% fat ground beef or ground sirloin and eggs in with the Worcestershire sauce and seasoning mixture then mix until eggs are completely mixed into the ground beef or ground sirloin.
  • Section the seasoned ground beef or sirloin into 8 and form into 8 hamburger patties For mini juicy burgers - just section the ground beef or ground sirloin into 16 smaller sections then form into 16 hamburger patties.
  • Place the hamburger patties on the grill or frying pan and sear the meat on medium high heat for about 4 minutes on each side (the burgers should look browned about half way through like the picture on the right before you flip the patties). After you have flipped the patties and let the burgers sear for a few minutes lower the temperature to a medium heat of about 250ºF, add cheese, green chili, or other heat friendly toppings of your choice, and cook the hamburgers for an additional 2 minutes.

Just add some french fries to this hamburger recipe and you have the hamburger joint eating experience without the fast food price.

Learn ASL to Bring the Hearing and Deaf Communities Together

Learn Sign Language & Help the Hearing and Deaf Cultures Have a Better Understanding

As a parent of a child who is deaf, learning ASL (meaning American Sign Language) so that I could teach my child ASL to provide a sure a way of communication and help my child learn the necessities of life, as well as provide my child with the ability to communicate with grandparents who also happen to be deaf, I have learned so much about both the hearing and deaf communities. Having grown up in the hearing community and learning what I have learned about the deaf culture as well as the hearing culture, has made such an impact on me that it brought me to make this post, as I could not continue my life as a parent of a deaf child and feel that I did all that I could do to provide the best for my child if I did not bring what I have learned to the attention of both cultures to try to bring the two communities together. 

The division of the hearing and the deaf is devastating, not just to the deaf culture (believe it or not) but to the hearing culture as well.  This division is the lack of understanding, and it is the lack of understanding that causes adversity in any culture.  This distressing factor is why I have decided to make available, to those who are willing to help me bring the deaf and hearing communities together, free sign language worksheets, ASL flash cards, sign language videos, and other ASL materials that I created to help teach my deaf child.
